I don't see offsets or size values in it, then I don't see archived files so probably the content is compressed.

Without an idea of the offset and compressed size of at least one of the files, I can't even make a scan.
Anyway I'm not sure if the data is compressed, probably they are just custom formats used by the game.

I've used the dolphin emulator to dump the wii textures but I'd like the HD versions from the PS3/360 which don't have mature emulators.

Someone else (hasn't been online in some time) has said "The compression/encoding is a modified LZ77" when talking about their current game which still uses the *.rez format. RavioliGameTools_v2.9 is the only thing I've come across that spits out usually *-broken.jpg&.dat files.. here's a sample that contains mostly .pngs, not sure if the csv file helps.

shoot, that specific set of files came from one game, while this set is the one Ravioli had success on,

if we could extract the second set of Gui_LCD files then perhaps perform the same thing on the first set? If so then their releases on all platforms should be accessable (.rez is used across wii/playstation/xbox/steam/android etc)

Is there possibly a way to spy on what the program does when it goes to open the assets? the mess of files in the .rez container get loaded into memory when a table gets loaded.

Their current games are called The Pinball Arcade, and Stern Pinball Arcade, which are free to play on steam with a free table or two to attempt.

The GUI_LCD.rez you provided is not the same file you used for the screenshot. There is no zlib compressed data in it.

Quite a mess, the png in GUI_LCD.Rez at offset 0x34 is for sure compressed with some algorithm but not just itself (I mean also the data before it), while the png at 0x79c is complete, and so on. TestFX.rez contains various wav files.
Anyway there is no real structure or index in both GUI_LCD.Rez and TestFX.rez, that usually means that the info are somewhere else (other files?)
The only thing I can suggest you is to use a file ripper viewtopic.php?f=17&t=712 to dump the known files
