I've been trying my best to find ways to extract the models like areas or costumes from the Attack on Titan 2 game, but I haven't had any luck at all. The furthest I've gotten is use the quickbms tool to extract one of the .bin files, and while I've been able to get the .dat's and other files, I dont really know where else I could go from there.

Can anyone help me?

Did you, by any chance, come across the sound effects files from the game while digging in the .bin ?
